Raw Pad Thai… A great vegan lunch! (Recipe provided by Rawfully Organic)
Ingredients:
- 4 cups of shredded zucchini
- 2 cups of shredded carrots
- 1 cup shredded red cabbage
- 1 sliced red bell pepper
- 1 cup of bean sprouts
- Half a cup of chopped cilantro
- 1 cup of sliced mushrooms
- 1 cup of sliced scallions
- Juice of one lime
- 1/4 cup of crushed pistachios as a topping
Sesame Dressing:
- 3/4 cup of raw sesame seeds
- 1/2 cup fresh apple juice
- 1/3 cup orange juice
- 1/4 cup crushed pistachios
- 1/4 cup tamarind sauce
- Half of one lime
- Combine all the ingredients together in a bowl. For the zucchini and carrots I use a vegetable spiral slicer to create “noodles.” I use a food processor to crush the pistachios.
- For the dressing, combine all ingredients into a food processor and blend. Pour over the raw vegetables. Enjoy!
