Raw Pad Thai

Raw Pad Thai… A great vegan lunch! (Recipe provided by Rawfully Organic)

Ingredients:

  • 4 cups of shredded zucchini
  • 2 cups of shredded carrots
  • 1 cup shredded red cabbage
  • 1 sliced red bell pepper
  • 1 cup of bean sprouts
  • Half a cup of chopped cilantro
  • 1 cup of sliced mushrooms
  • 1 cup of sliced scallions
  • Juice of one lime
  • 1/4 cup of crushed pistachios as a topping

Sesame Dressing:

  • 3/4 cup of raw sesame seeds
  • 1/2 cup fresh apple juice
  • 1/3 cup orange juice
  • 1/4 cup crushed pistachios
  • 1/4 cup tamarind sauce
  • Half of one lime
  1. Combine all the ingredients together in a bowl. For the zucchini and carrots I use a vegetable spiral slicer to create “noodles.” I use a food processor to crush the pistachios.
  2. For the dressing, combine all ingredients into a food processor and blend. Pour over the raw vegetables. Enjoy!
