Whole Wheat Veggie Pita

This whole wheat veggie pita is quick and easy to assemble. This is the perfect go-to healthy meal when you are in a hurry! Try this recipe out below. Feel free to substitute any of the below ingredients! Enjoy!

Ingredients:

Veggies for Pita

  • Mini organic whole wheat pita pockets
  • Hummus- I love vegetable or sun dried tomato
  • Cucumbers, sliced
  • Black olives
  • Red & green bell pepper, chopped
  • Mushrooms, sliced
  • Carrots, shredded
  • Handful of fresh baby spinach
  • Giant white beans or garbanzo beans

 Preparation:

  1. Take one mini whole wheat pita and place in a toaster oven for about 3-5 minutes. While the pita is toasting, prepare all the veggies to go inside the pita.
  2. Once the pita is hot, slice it in half (about 3/4 of the way down) and smother the inside with the hummus. Place all the veggies inside the pita.
  3. Close and serve pita sandwiches immediately.
